Sweet Potato Pie Cookies

  • ¾ C Butter
  • ¾ C Brown Sugar
  • 1 Egg
  • 2 C Mashed Sweet Potato (or two cooked Sweet Potatoes)
  • 1 Tbs Vanilla Extract
  • ¼ C Crushed Pineapple plus 2 Tbs of the juice
  • 1 tsp Baking Soda
  • 2 Tbs Corn Starch
  • ½ tsp Salt
  • 1 tsp Pumpkin Pie Spice
  • 2 C Flour
  • maple buttercream
  • ½ C Butter
  • 1½ C Powdered Sugar
  • ½ tsp Maple Extract
  • toppings
  • Chopped Pecans
  • Mini Marshmallows (toasted)
  1. Start off by placing two sweet potatoes into the microwave for about 10 min on high or if your microwave has a dummy button use that. While those are cooking gather all of your other ingredients. Once the potatoes are cooked/ fork tender. Let them cook for a few minuets until you can handle them and peel the skins off. Pop them into your stand up mixer. You can take your butter right from the fridge and pop it into the bowl with the sweet potatoes. Beat on low until the potatoes are mashed and the butter is melted/ softened.
  2. Next add the brown sugar and egg (* if the sweet potato mixture is too warm let it cool a bit prior to adding the egg) vanilla, pineapple and pineapple juice. Beat on low until mixed.
  3. Add all of the dry ingredients to the bowl and mix on medium for one minuet until the mixture comes together. Let the dough sit in the bowl for about 5- 10 min. This will allow the corn starch to work it's magic.
  4. Drop rounded tablespoons onto a parchment lined cookie sheet. Bake at 350* for about 15 minuets until golden brown.
  5. This maple frosting is the easiest thing to make! In your stand up mixer combine the softened butter, and on low slowly add your powdered sugar once you get to the consistency you want add the maple extract. I love a strong maple flavor so I tend to add a bit more depending on how I feel that day.
  6. For the finishing touches I frosted each cookie with the maple frosting. Quickly I sprinkled chopped pecans on top, so they would stick. Now with the marshmallows if you have a little blow torch you can place them on the cookies, and use the blow torch to "burn" them. If not you can always do what I did, and have a mini roasting party using your sish kabob sticks. Popping them under the broiler for a second.
