  • 1 lb Fresh Medium Shrimp, peeled and deveined
  • 1 Teaspoon Olive Oil
  • 1 Teaspoon Fresh Ginger, minced
  • ¼ Teaspoon Ground Black Pepper
  • 2 Cloves Garlic, minced
  • 4 6-inch Corn Tortillas, warmed (most are naturally gluten free but check the package)
  • ¾ Cup Packaged coleslaw mix/ or Broccolislaw (carrots, cabbage, broccoli)

  1. This recipe is beyond easy! To prep the shrimp peel and devein them if your local fish store hasn't done that for you. Then in a small skillet heat the olive oil over medium heat. Add the garlic, ginger and black pepper; cook and stir 30 seconds. Add the shrimp; cook for 3-4 minuets until shrimp are opaque.
  2. Place the tortillas on each of the plates. Place about ¼ cup of the coleslaw mix onto each of the tortillas; add the warm shrimp then top with the Mango Madness Guacamole.
  3. Fold over each tortilla to form a taco then serve with two lime wedges. These Shrimp Tacos with Mango Guacamole are quick, easy, delicious and healthy! Happy Cinco De Mayo my friends!
