Monster Mash Fudge Brownies ~ Gluten Free

Looking for something to make your little Ghouls and Goblins this Halloween? These Monster Mash Brownies are the perfect treat for everyone! These gluten-free/dairy free goodies are sure to pass even the most critical of taste testers.
  • Brownie Ingredients :
  • ½ Cup Coconut Oil or Butter (if no dairy allergy)
  • 4 1-Ounce Bars of Unsweetened or Semisweet Chocolate, broken up
  • ½ Cup Granulated Sugar
  • 2 Eggs (or 1 Banana, mashed if Vegan)
  • 1 Teaspoon Vanilla Extract (gluten-free)
  • ⅔ Cup Gluten Free Flour Blend (or regular flour if not GF)
  • ¼ Teaspoon Baking Soda
  • Frosting Ingredients:
  • 2 Cups Icing Sugar
  • ½ Cup Coconut Oil or Butter, softened but not melted
  • 1 Tablespoon Vanilla (GF)
  • 2 Tablespoons Dairy Free Milk (I used coconut)
  • Favorite food coloring and candies for decorating
  1. Pre-heat the oven to 350* and spray a 8X8 pan with non-stick spray.
  2. Start off by melting the coconut oil and chocolate in a bowl in the microwave for 1 min. Stir the mixture using a whisk until the chocolate is melted.
  3. Add the sugar, eggs, vanilla stirring until combined. Next add the "flour" and baking soda stir the mixture until completely combined removing most of the lumps. Pour the mixture into your prepared pan and bake in the oven for 30-35 min. I love undercooked brownies, so I tend to pull them out closer to the 30 min mark. Allow the brownies to cool prior to frosting.
  4. To make the frosting whip the coconut oil with your paddle attachment using your stand up mixer for a minuet to get all the lumps out. Slowly add the icing sugar a little at a time until completely incorporated. The mixture will be chunky and grainy. Add the vanilla and continue to beat adding a bit of the coconut milk (or milk of your choice) until the frosting reaches your desired consistency. For a thicker frosting use less milk and for a thinner frosting add more. * If your frosting becomes too runny just add a bit more icing sugar to "thicken" it up. The nice thing about frosting is it's pretty forgiving.
  5. Separate the frosting into a few smaller bowls. Using your favorite food coloring tint the frosting to your desired colors. Now its time for the fun to start!! This is the perfect time to let the kids help with the decorating. Your little monsters will love creating their very own Monster Mash Brownies and you can sleep easy knowing they are allergy free!
