Tzatziki Soup

Do you like Tzatziki sauce as much as I do? I could literally dip everything in it. It's cool and refreshing and light with a hint of brightness from the mint and lemon. Tzatziki Soup is the perfect addition to your summer meal.
  • 2 English Cucumbers, peeled, seeded and diced very fine
  • ¼ Cup Red Onion, diced fine
  • 4 Cloves Garlic, minced
  • 1 Lemon, juiced
  • 1 Teaspoon Lemon Zest
  • 4 Tablespoons Fresh Mint, chopped
  • 4 Tablespoons Fresh Dill, chopped
  • 3 Cups Plain Greek Yogurt
  • ½-1 Cup Water or Milk (just enough to make the sauce a soup consistency)
  • 1 Teaspoon Salt
  • Pepper if desired
  1. In a large bowl add the Greek yogurt, salt, lemon juice and lemon zest, set aside.
  2. To prep your cucumbers you need to peel them. Then slice them in half lengthwise and use a spoon to scoop all of the seeds from the middle, discard the seeds. Dice the cucumber, remember this will be a soup not a salad so make sure its a super fine dice. Add everything to the bowl of Greek Yogurt.
  3. Next thinly slice and chop the red onion and garlic. Wash, and dry the herbs then chop the mint and dill. Add everything to the bowl and combine until thoroughly mixed and all the cucumbers are coated.
  4. Allow the mixture to sit for at least 15 min which will allow the natural juices from the cucumbers to release. Once you allow the soup to sit add as much water as you like to get the constancy you like. All cucumbers are a bit different as far as the amount of water they contain so the amount of water necessary can change each time. You can also feel free to use milk too if you would like a bit richer soup. Chill in the refrigerator until you are ready to serve. Tzatziki Soup is the perfect start to your next summer meal!
