It’s Tres De Mayo! And that only means one thing! Only two days until Cinco De Mayo! I love Mexican food and never need an excuse to eat it. When in Rome do as the Romans do eat Mexican food! This Mango Madness Guacamole is delicious on its own served with some corn chips and it also pairs beautiful with my recipe coming on Monday. Sweetness from the mango with the creaminess from the avocado equal perfection.
I will warn you…a) I murdered the mango while cutting it, so sorry for the terrible picture. b) I hate cilantro, but a little bit does really add an amazing flavor of freshness to the guacamole. If you aren’t a cilantro fan like myself you can leave it out, but trust me just a tiny bit won’t kill you 🙂
Ingredients:
1 Large Ripe Mango, peeled and diced
1/4 Cup Red Onion, diced
2 Ripe Avocados, pit removed and diced
Zest of one Lime
Juice of 1 Lime
2 Teaspoons Jalapeno, finely chopped
2 Tablespoons Fresh Cilantro (if desired)
Salt to taste
This recipe is beyond easy to make and you can have it ready to go in 5 minutes or less! It’s great topped on fish, chicken and pork due to the mangos. If you don’t have mangos you can also use pineapple instead.
To get the guacamole started slice each of the avocados in half and remove the pit. I usually just wack the knife into the pit and it comes right out. Once the pit is removed carefully using the knife slice the inside of the avocado into a grid like pattern; then using a normal spoon scoop the avocado out into a medium bowl.
Next peel and slice the mango and add it to the bowl. Mine was a bit ripe and was sliding all over the place, but I did find this handy tip after the fact (day late and a dollar short ALWAYS). Once you have the mango ready to go; add it to the bowl.
Add all of the remaining ingredients into the bowl then toss everything using a large spoon. Salt the guacamole to taste. Serve with a large bowl of corn chips and a large glass of your favorite sangria.
