It’s officially our first birthday here at Sassy Southern Yankee!!! We wanted to take a moment to say “Thank YOU” for all of your love and support this past year. In honor of our first birthday we wanted to do something special for our readers!
Since we can’t share a piece of our birthday cake with you we thought we would include you in on the fun another way! First we wanted to share this delicious and moist Lemon Thyme pound cake, and second we wanted to give away a few prizes. Ingredients for Cake:
2 Sticks Butter, Softened
2 Cups Granulated Sugar
5 Eggs, room temperature
1 Cup Buttermilk
1 Teaspoon Baking Soda
1 Teaspoon Baking Powder
3 Cups Gluten Free Flour Blend
2 Lemons (juice and zest reserved)
2 Sprigs Fresh Lemon Thyme (more for garnish)
For Glaze:
1 Lemon, juiced and zested
2 Cups Icing Sugar
Pre-heat the oven to 350* and grease and “flour” a bunt pan or two loaf pans.
Using your stand up mixer cream together the butter and sugar until fluffy. Add the lemon juice, lemon zest and then add one egg at a time until they are all incorporated. Add the baking powder and soda.
Next add the Gluten Free Flour and Buttermilk alternating 1 Cup flour then 1/2 of the buttermilk until combined. Stir in the fresh lemon thyme. Pour the batter into the greased and floured pan.
Bake for 50 min or until a toothpick comes out clean when inserted. Remove from oven and allow the cake to cool in the pan for about 10 min. Turn cake out onto a wire rack to continue to cool.
To make the glaze just combine the icing sugar and lemon juice until smooth. Once the cake is cooled drizzle the glaze over the cake and garnish with extra lemon zest and fresh lemon thyme if desired.
