Simple Greek Salad

Fresh and bright it looked beautiful, and didn't weigh you down. This is the perfect side dish to some grilled chicken or a nice steak. This simple greek salad would also make a quick and easy salad to take to the next backyard BBQ. Feel free to make this ahead of time in fact I would strongly suggest it to allow the flavors to mix and mingle.
  • 1 Cucumber (I prefer the hot house variety)
  • 1 Red Pepper
  • 1 Yellow Pepper
  • 1 Orange Pepper
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Vinegar
  • ½ of a Fresh Lemon Juiced or about 2 Tablespoons lemon juice
  • 2 Teaspoons Oregano
  • 1 Clove Garlic, chopped
  • 2 or 3 Tablespoons Fresh Mint, Chopped or 1 Teaspoon Dry
  • ¼-1/2 Cup Feta Cheese, crumbled (omit if Paleo)
  • Handful of Kalamata or Greek Olives, chopped
  • Fresh cracked black pepper
  1. In a large bowl combine the olive oil, lemon juice and vinegar. Add the Oregano, Mint and Garlic.
  2. Using a sharp knife chop all of the peppers into ½ in to 1 inch pieces. Chop the cucumber into half length wise then into ½ inch pieces. Trow them into a large bowl and toss.
  3. Add the feta cheese and Kalamata Olives if desired. Allow to sit at least one hour or longer to allow the flavors to marry. Place in fridge until ready to serve. If you are making it a day ahead be sure to remove from the fridge about an hour prior to serving so that the olive oil melt.
