Chipotle-Glazed Roast Chicken With Sweet Potatoes

The chicken is moist, and flavorful and the sweet potatoes are cooked to perfection. What more could you ask for? It gets better not only does it take one pan, but its Paleo and Gluten Free. I'm telling you this dish scores a home run in my book. The sweetness from the honey, smokiness from the chipotle's and the warmth from the cinnamon and cumin are the perfect combo! If you are looking for a quick and delicious meal that won't have you spending the night washing dishes this chipotle- glazed roasted chicken with sweet potatoes is for you!
Ingredients
  • 2 Sweet Potatoes, cut into 1 inch pieces
  • 2 Tablespoons Olive Oil
  • 4 Chipotle Chili's with Adobo Sauce, minced
  • 3 Cloves Garlic, Chopped
  • 3 Tablespoons Honey (raw honey is best if you have it)
  • 3 Teaspoons Apple Cider Vinegar
  • 1 Teaspoon Cumin
  • 1 Teaspoon Cinnamon
Instructions
  1. Pre-Heat the oven to 400*. In a medium bowl toss the sweet potato pieces with olive oil. Place them in a cast iron skillet or a roasting dish like a 8x8 pan or larger. Bake in the oven for 20 min.
  2. While the potatoes are roasting start making the chicken sauce. If you like sweet and spicy then this sauce is for you! Using the bowl that you just tossed the sweet potatoes in (why mess up another dish) combine the honey, apple cider cumin and cinnamon. Stir until smooth. Next add in the chopped garlic, chipotle chili's with adobo. Pop the chicken into the bowl, and ensure that it's completely coated with the chipotle goodness! Let the flavors come together while the sweet potatoes cook. If you wanted to do this ahead of time and let it hang out a bit longer I can only imagine how amazing it would be. I'm a busy woman so time wasn't in my favor; however the 10 minuets that it marinated was perfect.
  3. Remove the skillet from the oven and give the sweet potatoes a good toss in the pan. Place the chicken directly on top of the potatoes along with all of the yummy sauce from the bowl. Bake in the oven for 25 to 30 min until the chicken is cooked through, and the potatoes are tender.
