Limoncello- Part Two

  • 4 Cups Sugar
  • 4 Cups Water
  1. To Make the Simple Syrup~ In a large pan add the sugar and water. Cook over medium heat stirring until the sugar is completely dissolved. Allow the mixture to come to a boil and boil for 5 min. Remove the simple syrup from the heat and allow to cool.
  2. Part Two of Limoncello~ While the Simple syrup is cooling take your jar of lemon/ orange infused vodka and remove all of the lemon peels. I placed a colander over a large pitcher and strained the peels that way. Once the lemon or orange peels are removed discard the peels into the trash.
  3. Slowly add the simple syrup to the infused vodka. You can adjust the sweetness of the limoncello by adding as much or as little of the simple syrup as you like. This is where the fun starts you get to taste test the mixture along the way. It's a hard job but someone has to do it! Once you have reached the desired sweetness place the limoncello into your original glass jar or into glass jars with tops that seal. I picked up some win bottles with hinge caps.
  4. Place the limoncello into a cool dark place and allow to set for another 30 days to increase the flavor and allow everything to blend. If you can't wait that long you can start to drink the limoncello now. I recommend serving it chilled and using it as a sipping liquor, you can add it to other mixed drinks or a bit of hot tea on a cold night.
