Grilled Turkey Pesto Sandwich

Ingredients
  • 8 Roma tomatoes or you can use sun-dried ones too!
  • 4 Cloves Garlic
  • ¼ Cup Olive Oil, divided
  • 1 French Bread
  • 1 Pack of Turkey Tenderloin or you could use 2 chicken breasts
  • ½ Pesto
  • ¼ -1/2 Cup Parmesan Cheese
  • ¼ Teaspoon Chili Flakes if Desired
  • Salt and Pepper to Taste
Instructions
  1. If you are using fresh tomatoes Pre-heat the oven to 400*. Wash and cut all of the tomatoes in half removing as many seeds as possible. Place the tomatoes in and oven safe dish. Peel the garlic cloves and chop in half. Place them in the pan with the tomatoes, drizzle the pan with olive oil and place in the oven for about 20 min. We are looking for the juices to condense and the tomatoes to roast to bring out their sweetness.
  2. While the tomatoes are cooking start flattening the Turkey with a mallet until it is about ¼ -1/2 inch thick. Once you have the Turkey Flattened season it with a bit of salt and pepper. Next place the Turkey in a HOT grill pan or a regular pan with a bit of non stick cooking spray. As the turkey starts to cook take about 1 Tablespoon of the pesto and brush it on top of the turkey. Once the Turkey is half way done cooking about 5 minuets flip it over and brown the other side. Cook until heated to 165* then set aside on a plate.
  3. Depending on the size of your baguette chop it into 3 large pieces. Then slice each piece open lengthwise to make a pocket for the sandwich. Drizzle each piece of bread with a bit of olive oil. In your cleaned re-heated grill pan place your bread oil side down to grill it to a beautiful golden brown. I like to place something heavy on top of the bread to press it firmly into the pan for better grill marks. Once browned set aside.
  4. Now to the fun part assembly time! Take your oven roasted tomatoes and coarsely shop them up. Then place them on the bottom layer of the bread. Next on the top layer of the bread spread the remaining pesto. Sprinkle on your parmesan cheese and the red pepper flakes if desired. Now add-on your turkey and salt and pepper if desired. Fold it all together and slice the sandwich in half. This made 6 Turkey Pesto sandwich halves that were huge! You could also make everything ahead of time and then just grill up the bread as necessary. This is a quick easy dinner that is relatively healthy with the exception of the bread. If you were looking to have it be a bit more calorie friendly you could always use a flat bread or a wrap.
