Ceylon Cinnamon Swirl Blondies

These are like a blondie meets a snickerdoodle! Ceylon Cinnamon Swirl Blondies for my non-chocolate lovers of the world.
Ingredients
  • ½ Cup Coconut Oil or Butter (1 Stick), melted
  • 1 Cup Brown Sugar, packed
  • 1 Egg
  • ¼ Cup Water
  • 1 Cup Gluten Free Flour Mix (or regular flour if you aren't GF)
  • 1 Teaspoon Gluten Free Vanilla
  • For the Swirl
  • ½ Cup Gluten Free Flour Mix (or regular flour if you aren't GF)
  • 1 Egg
  • 2 Tablespoons Ceylon Cinnamon
  • ½ Cup Brown Sugar
  • ¼ Cup Coconut Oil or Butter, melted
Instructions
  1. Pre-heat the oven to 350* and spray a 8x8 pan with nonstick spray.
  2. In a medium glass bowl melt the coconut oil or butter in the microwave. Add the packed brown sugar, egg, and vanilla; stir until the mixture is combined.
  3. Add the flour to the wet mixture and stir just until combined (be careful not to over stir or the blondes will be hard). Pour the batter into the greased pan and spread evenly in the pan.
  4. To make the cinnamon swirl melt the coconut oil or butter; then add the brown sugar, ceylon cinnamon, egg and Gluten Free Flour blend. Whisk until smooth; then drop by the teaspoonful over the blondie base in the pan. Once you have all of the cinnamon swirl mix used; take a knife and make a swirl like pattern incorporating the blondie with the cinnamon swirl. You can use the knife to swirl the blondies as much or as little as you like.
  5. Bake for 30-35 min. Allow the blondes to cool slightly and then dive right in! You could also mix this up, and add pecans or drizzle them with caramel sauce!
