Gluten Free Cannoli Cookies with Dark Chocolate

Part Cookie and Part Tea Cake these Gluten Free Cannoli Cookies with Dark Chocolate are the perfect addition to a cup or tea or coffee.
  • 1 Cup Butter, room temperature
  • 2 Cups Sugar
  • 3 Eggs
  • 1 Teaspoon Vanilla
  • 1½ Teaspoon Cinnamon
  • 1 (15oz) container of Whole Milk Ricotta Cheese
  • ½ Cup Coconut Milk (or whatever Milk you drink)
  • 1 Teaspoon Baking Powder
  • 2½ Cups Gluten Free Flour Blend
  • 2 Bars Orange Infused Dark Chocolate
  • 1 Tablespoon Coconut Oil or Butter
  • ½ Cup Pistachios, chopped finely
  1. Preheat oven to 350* and line two cookie sheets with parchment paper or non-cook spray.
  2. In a standup mixer combine the butter and sugar until light and fluffy; then add the eggs one at a time. Add the remaining wet ingredients and beat until smooth. Add the dry ingredients and beat until everything is combined. Drop the dough by rounded teaspoons onto a parchment lined or greased cookie sheet. Bake for 10 min at 350*.
  3. Remove from the oven and place on a cooling rack. Once the Cannoli Cookies are cooled melt the Orange Infused Dark Chocolate bar in a microwave safe bowl with the coconut oil for about 1 minute on high. Allow the chocolate to cool slightly, so that it's a bit thicker like frosting.
  4. While the chocolate is cooling chop up the pistachios and set aside for garnish.
  5. To assemble the cookie just put a dollop of chocolate on top of each cookie then sprinkle with about ½ teaspoon of pistachios. Allow the chocolate to cool completely (I cheat and place them in the fridge for about 20 mins). Viola! You have the perfect Gluten Free Cannoli Cookies with Dark Chocolate.
