Cherry Blondies

Gooey buttery brown sugar with fresh cherries and a hint of chocolate, Cherry Blondies are the perfect balance of sweet.
  • ½ Cup Butter (1 Stick), melted
  • 1 Cup Brown Sugar, packed
  • 1 Egg
  • 1 Cup Gluten Free Flour Mix (or regular flour if you aren't GF)
  • 1 Cup Semi-Sweet Chocolate Chips or Dark Chocolate
  • 1 Cup Fresh Cherries, pitted and sliced in half
  1. Pre-heat the oven to 350* and spray a 8x8 pan with nonstick spray.
  2. Wash, remove pits and slice cherries in half, set aside. I think I ate my weight in cherries while doing this step :)
  3. In a medium glass bowl melt the butter in the microwave. Add the packed brown sugar, egg, and vanilla; stir until the mixture is combined.
  4. Add the flour to the wet mixture and stir just until combined (be careful not to over stir or the blondes will be hard).
  5. Add the chocolate chips and Cherry pieces. Pour the batter into the greased pan and spread evenly in the pan.
  6. Bake for 30-35 min. I like mine gooey with ice cream so I tend to only bake them for 30 mins. Allow the blondes to cool slightly and then dive right in! I like to serve my cherry blondes with some vanilla ice cream. You could also mix this up, and use fresh raspberries and even white chocolate chips. Ohhh the possibilities!
