Darn Good Ginger “Beer Can” Chicken with Roasted Peaches {Gluten Free}

First things first… This meal isn’t going to win any awards for presentation, but it is delicious!  I tried several times to make it look pretty in the pictures, but Ginger “Beer Can” Chicken with Roasted Peaches just isn’t a fancy meal; it’s just darn good and full of flavors! Two of my favorite things ginger and peaches are the perfect pair and they work beautifully with this chicken.

Darn Good Ginger "Beer Can" Chicken with Roasted Peaches

Ingredients:

1 Whole Chicken (5-7lbs)

1/2 Cup Brown Sugar

1/4 Teaspoon Chili Flakes (more if you like a little kick)

2 Teaspoons Salt

1 Tablespoon Ground Ginger

1 Can Ginger Beer

4 Large Peaches, sliced

Preheat the oven or grill to 375*.  Then line a metal pan with foil for easy clean up.

Seriously this recipe is so easy you are going to LOVE it!  In a small bowl combine the brown sugar, chili flakes, salt, ground ginger; set the mixture aside.

Now it’s time to prep the chicken.  I have one of those handy beer butt chicken holders.  I found it at the hardware store in the BBQ aisle for like $3.00.  If you’ve never used one before then let me give you the run down.  To get started you will need a can, it can be a pop can, beer can whatever you like as long as it’s metal.  I used ginger beer that I found in the wine aisle (It’s with the mixers because it’s non alcoholic).  Empty the first 1/2 to 1 inch of liquid out of the can into a small sauce pan.  Place the ginger beer can into the beer butt chicken holder.

Next take your fresh chicken and coat the inside and outside with the brown sugar ginger rub.  Next “feet” first place the chicken over the opening of the beer can.  I named my chicken Henry.  Give Henry a nice foil hat so that he doesn’t dry out.  Theres nothing worse than a dried out chicken breast.

Place the Henry (chicken) into the oven and bake at 375* for 30 minuets. After 30 minuets remove the chicken from the oven or grill, and add the sliced peaches to the bottom of the pan; return the chicken to the oven and bake an additional 30 mins.

Remove the chicken from the oven once more and remove the foil “hat” then place the chicken back into the oven for 15 minuets to allow the top to reach a beautiful golden brown.  Once the chicken is a beautiful golden color remove it from the pan and allow to rest.

While the chicken is resting remove the peaches and juices from the chicken, and place them in the pan with the reserved ginger beer. Bring the peaches to a boil and cook until fork tender about 10 minuets.  The peaches will not be the most beautiful thing you have even seen, but I can assure you they will be delicious. This meal is not about fancy presentation it’s about darn good food!
