Lemon Rosemary Chicken Skewers

 

 

Lemon Rosemary Chicken Skewers 5I was looking for something quick, and easy that I could make on a weeknight cause I get Hangry (anger due to Starvation) when I don’t eat after work!  Me being hangry is to be avoided at all times if you don’t believe me ask the men in my life 😉 These Lemon Rosemary Chicken Skewers hit the spot! Lemon, rosemary and a bit of Dijon mustard make these tender, juicy and full of flavor.  The best part is you can marinate the chicken ahead of time then just toss them on the grill when you get home from work.  In 15 mins or less you can have a healthy dinner on the table.

Ingredients: 

1 Lb Chicken Breasts, sliced into thin strips

3 Lemons, sliced

2 Cloves Garlic, smashed

1/4 Cup Olive Oil

1 Tablespoon Dijon Mustard

1 Tablespoon White Wine Vinegar

1 Tablespoon Rosemary, chopped

1/2 Teaspoon Salt

1/2 Teaspoon Fresh Ground Black Pepper

Using a sharp knife slice the lemons into 1/4 inch slices.

In a resealable bag add the sliced lemons, olive oil, Dijon mustard, white wine vinegar, rosemary, salt and pepper.

 

Next slice the chicken into strips about 1/2 inch thick; place the chicken in the resealable bag. Allow the chicken to marinate for at least 30 minutes or up to 24 hours.  If it’s a busy week night I prep this the night before to save time when I get home.

Preheat the grill or grill pan; then remove the chicken from the marinade and place it on the skewers. Cook the lemon rosemary chicken skewers on the grill until cooked through and no pink remains.  Serve with your favorite side salad and some fresh fruit for the perfect healthy quick dinner.
