Dark Chocolate Peanut Butter Brownies

These Dark Chocolate Peanut Butter Brownies are love at first sight.  Cheat weekend never tasted so good!

I have officially made it through my first Whole 30 and I will say I’m about 9lbs lighter!  With that being said the one thing I truly missed while clean eating this past month was peanut butter!  If you are going to have peanut butter you must have a bit of chocolate because lets face it chocolate is way better than jelly 😉  With that being said Saturday at exactly 8:01 am I made these Dark Chocolate Peanut Butter Brownies.  I know!  I was proud of myself too for waiting a whole extra 8 hours and 1 minute to dive into the junk food.

I made mine with a boxed GF brownie mix (I was impatient), but you can feel free to make the brownies from scratch.  The creamy, crunchy peanut buttery frosting combined with the dark chocolate peanut butter cups is really where it’s at.  I’m not ashamed to admit that I did in fact lick the bowl and anything else the peanut butter frosting came into contact with 🙂

Ingredients:

1 Boxed Brownie Mix, prepared using manufactures directions (I used Gluten Free)

1/4 Cup Butter, room temperature (1/2 of a stick)

1 Cup Peanut Butter (I used 1/2 C Creamy and 1/2 C Chunky)

1 1/2 Cup Powdered Sugar

1 Bag Dark Chocolate Peanut Butter Cups, unwrapped and chopped

3/4 Cup Peanut Butter Chips (found in the baking aisle near the chocolate chips)

Prepare the brownies following the package directions; then allow them to cool.  If you are impatient like me then toss them in the fridge to cool faster 😉

To prepare the peanut butter frosting combine the peanut butter, butter and powdered sugar in a stand up mixer; blend on low until evenly combined and frosting is smooth.  Using a spatchlua spread the frosting over the brownies.

Now it’s time for the tedious part unwrapping all of the dark chocolate peanut butter cups.  If you aren’t a dark chocolate fan you can purchase the unwrapped mini’s to save time, but I’m a fan of dark chocolate and the extra 3 minutes spent unwrapping them is well worth it!  I have found over the years that freezing them first makes it easier to peel off the paper and chop them (having a sweet tooth has taught me a few things over the years).

Once the wrappers are removed use a large knife to chop the peanut butter cups. Evenly sprinkle the peanut butter cups over the frosted brownies.  Next add the peanut butter chips and voila! You have Dark Chocolate Peanut Butter Brownies.  Now the only thing left to do is to ask yourself do you really want to share?
