Shrimp Tacos with Mango Guacamole

Shrimp Tacos with Mango Guacamole

Ingredients:

1lb Fresh Medium Shrimp, peeled and deveined

1 Teaspoon Olive Oil

1 Teaspoon Fresh Ginger, minced

1/4 Teaspoon Ground Black Pepper

2 Cloves Garlic, minced

4 6-inch Corn Tortillas, warmed (most are naturally gluten free but check the package)

3/4 Cup Packaged coleslaw mix/ or Broccolislaw (carrots, cabbage, broccoli)

Mango Madness Guacamole Recipe

 

This recipe is beyond easy!  To prep the shrimp peel and devein them if your local fish store hasn’t done that for you.  Then in a small skillet heat the olive oil over medium heat.  Add the garlic, ginger and black pepper; cook and stir 30 seconds.  Add the shrimp; cook for 3-4 minuets until shrimp are opaque.

Place the tortillas on each of the plates.  Place about 1/4 cup of the coleslaw mix onto each of the tortillas; add the warm shrimp then top with the Mango Madness Guacamole.
