Cranberry Cake Drizzled with Caramel Sauce {Gluten Free}

A few years ago my dear friend Mary Ellen brought this amazing Cranberry Cake Drizzled with Caramel Sauce to a work holiday party, and it has been near and dear to my heart and waistline ever since.  This cake is in one word DELICIOUS!  Lucky for all of you she is letting me share this wonderful holiday cake with you!  She’s an amazing cook and I’m honored that she would share this.  The tartness from the cranberries balances perfectly with the homemade caramel sauce.  This cake is light and moist, and is a real beauty when presenting to family and friends.  I guarantee this will be a hit in your house this holiday season and for years to come.  I’m seriously dreaming about this cake as I type.

 

Ingredients:

2 Cups Gluten Free Flour Blend

1 1/2 Cup Sugar

2 Tablespoons Baking Powder

4 Tablespoons Butter

Pinch of Salt

3 cups fresh cranberries, cut in half

1 1/2 cup milk

Simple Homemade Caramel Sauce

 

Pre-heat the oven to 350* F.

Wash the cranberries then slice each of them in half.  I know that this is tedious but it makes a huge difference.  Set the Cranberries aside and start making the batter.

In a large bowl combine the GF flour, butter, sugar, baking powder and salt; cutting it in together with a pastry cutter or a fork like you would a pie crust.  You should have a grainy texture.  If you have a food processor you can use that to do this step as well.

Once the dry ingredients are combined add the milk and cranberries.  Stir all together till flour mixture is just moist.

 

 

Cranberry Cake with Caramel Sauce

 

Pour in well greased 9 x 13 inch pan or in a 12 inch round cake pan. (If using round pan, still grease the pan, but line the bottom with parchment paper, it makes it easier to un-mold after it has cooled. Bake at 350 degrees for 50-60 minutes. Until a toothpick comes out clean when inserted into the cake.

Sauce: (put on just before serving)

I brush some on top of cake after the cake has cooled. Pass sauce and Cool Whip with cake.  Mary Ellen’s Cranberry Cake Drizzled with Caramel Sauce is the perfect holiday cake.  It’s seriously a beautiful cake and is moist and delicious to boot!
