Gluten Free Sweet Honey Cornbread

There’s nothing like a good skillet of sweet honey cornbread on a rainy cold day.  Awe heck I would take sweet honey cornbread on almost any kind of day.  Drizzled with a bit of extra honey, a pound of butter and I’m in heaven.  The only thing that could make it better would be a skillet of corn, bacon and onions to go with it.

Cornbread’s such a versatile food often times on the weekends I find myself eating it at each meal.  This sweet honey cornbread is wonderful on its own, but if you like todays recipe just wait until I share my Apple Pecan Maple Sausage Cornbread stuffing its to die for!  I’m so excited to share some of my favorite Thanksgiving recipes.  What’s your favorite thing to pair with your cornbread?  Soups? Ingredients:

1 Cup Yellow Corn Meal

1 Cup Gluten Free Flour Mix

1/2 Cup Sugar

1 1/2 Tablespoons Baking Powder

1 Teaspoon Salt

1 Teaspoon Vanilla

1 Cup Buttermilk or Milk with a bit of lemon juice

3 Eggs, room temperature if possible

1/2 Cup Honey

6 Tablespoons Butter, melted

Additional Butter and Honey for drizzling if desired

 

Pre-heat the oven to 375* and grease a cast iron skillet or 9X13 pan with 1 Tablespoon of the melted butter (if you have bacon grease lying around that’s even better).

In a mixing bowl combine all of the dry ingredients so that everything is evenly combined.  Next add all of the wet ingredients and stir together using a whisk until you remove all the lumps and the batter is smooth.

Pour the cornbread batter into the cast iron skillet and bake in the oven about 20-25 min until slightly golden on top.  Remove from the oven and drizzle extra honey on top then serve with butter if desired.
