Monster Mash Fudge Brownies ~ Gluten Free

If you have little ones these are the perfect opportunity to have “helpers” in the kitchen.  They can help stir the brownie batter and then create their favorite monsters before devouring them! These brownies are my favorite one bowl brownie recipe.  No muss or fuss with these bad boys, and the flavor is out of this world.  *This recipe is dairy and gluten-free, but feel free to supplement using dairy and regular flour if you don’t have an allergy.

Brownie Ingredient’s :

1/2 Cup Coconut Oil or Butter (if no dairy allergy)

4 1-Ounce Bars of Unsweetened or Semi-sweet Chocolate, broken up

1/2 Cup Granulated Sugar

2 Eggs (or 1 Banana, mashed if Vegan)

1 Teaspoon Vanilla Extract (gluten-free)

2/3 Cup Gluten Free Flour Blend (or regular flour if not GF)

1/4 Teaspoon Baking Soda

 Frosting Ingredients: 

2 Cups Icing Sugar

1/2 Cup Coconut Oil or Butter, softened but not melted

1 Tablespoon Vanilla (GF)

2 Tablespoons Dairy Free Milk (I used coconut)

Favorite food coloring and candies for decorating

 

Pre-heat the oven to 350* and spray a 8X8 pan with non-stick spray.

Start off by melting the coconut oil and chocolate in a bowl in the microwave for 1 min.  Stir the mixture using a whisk until the chocolate is melted.

Monster Mash Fudge Brownies ~ Gluten Free

Add the sugar, eggs, vanilla stirring until combined.  Next add the “flour” and baking soda stir the mixture until completely combined removing most of the lumps.  Pour the mixture into your prepared pan and bake in the oven for 30-35 min.  I love undercooked brownies, so I tend to pull them out closer to the 30 min mark.  Allow the  brownies to cool prior to frosting.

To make the frosting whip the coconut oil with your paddle attachment using your stand up mixer for a minuet to get all the lumps out.  Slowly add the icing sugar a little at a time until completely incorporated.  The mixture will be chunky and grainy.  Add the vanilla and continue to beat adding a bit of the coconut milk (or milk of your choice) until the frosting reaches your desired consistency.  For a thicker frosting use less milk and for a thinner frosting add more.  * If your frosting becomes too runny just add a bit more icing sugar to “thicken” it up.  The nice thing about frosting is it’s pretty forgiving.

Separate the frosting into a few smaller bowls.  Using your favorite food coloring tint the frosting to your desired colors.
