Grilled Philly Cheese Steak Nachos- Gluten Free

I have a confession…. I love Nachos.  I liked them before going gluten-free.  Now that I’m gluten-free I’ve found that pretty much anything that I loved eating on bread is just as amazing if not better than the original on tortilla chips.   I had some steak leftover from the other night when we made those amazing Steaks with Three Herbed Garlic Butter, so I decided why not reinvent the wheel with these Grilled Philly Cheese Steak NachosPhilly Cheese Steak Nachos

It’s the best of both worlds.  You have perfectly grilled steak with a creamy garlicy cheesy sauce.  Then there is the sweetness from the sautéed onions with the crunch of the chips and fresh peppers.  Its the perfect combo especially on game day.  These amazing nachos can be made in the oven or over the charcoal grill while tailgating. I hope you enjoy them as much as we did!

*If you didn’t have leftover steak you could always cheat and purchase 1/2 lb of roast beef from the deli at your local supermarket.

Ingredients:

8 oz Steak, grilled and chopped into 1/2 inch pieces

1 medium Red Onion, diced

1/2 Green Pepper, chopped

1/2 Red Pepper, chopped

1 bag of your favorite corn tortilla chips

1 Cup Cream

1/2 Cup Parmesan Cheese

2 Cups Provolone or Mozzarella cheese, shredded

3 Cloves Garlic, minced

1 Tablespoon Butter

1 Tablespoon Olive Oil

1/2 Teaspoon Fresh Ground Black Pepper

1/4 Teaspoon Red Pepper Flakes (optional)

 

Pre-Heat Oven to 400*.

In a cast iron pan or on a cookie sheet empty the bag of tortilla chips and set aside.  Now we will get started on the wonderful garlic cream sauce.  It’s so good you are going to want to swim in it trust me.

Using a microplane grate the garlic into a small sauce pan add the butter and olive oil.  Heat on low until the garlic becomes fragrant.  Then add the pepper and red pepper flakes to “wake” them up along with the onion and sauté until it becomes translucent about 4 min.  Stir in  the cream; cook until it begins to bubble.  Next add the parmesan cheese while stirring.  The mixture will start to thicken.

Pour the garlic cream sauce over the nacho chips.  Then add the shredded provolone cheese evenly over the chips.  Next evenly sprinkle the diced steak, red and green peppers over the nacho chips.
