Its national Milk Chocolate day! Yay?  I love my chocolate as much as the next girl, but if I’m going to be honest milk chocolate is probably at the bottom of my chocolate list.  I’m a dark chocolate fan all of the way!!  So in honor of Milk chocolate day we are going to compromise, and celebrate dark chocolate day!!! Whoot! (notice the excitement level change).

Cherries

This weekend I went to the farmers market and bought these amazing cherries and wanted to put them to good use.  My parents were coming over for sunday dinner, and if you know my father you know he has the biggest sweet tooth around.  I swear he can eat candy like none other and stays pencil thin (a genetic trait I sadly didn’t inherit).  My mother on the other hand is not a fan of desserts.  With that being said I figured I would whip up some Cherry Blondies.  Gooey buttery brown sugar with fresh cherries and a hint of chocolate, these Chocolate Covered Cherry Blondies were the perfect balance of sweet.  These were so good my momma even went back for a seconds.  Happy National Dark Chocolate day Ya’ll!! 😉

Ingredients:

1/2 Cup Butter (1 Stick), melted

1 Cup Brown Sugar, packed

1 Egg

1 Cup Gluten Free Flour Mix (or regular flour if you aren’t GF)

1 Cup Semi-Sweet Chocolate Chips or Dark Chocolate

1 Cup Fresh Cherries, pitted and sliced in half

 

Pre-heat the oven to 350* and spray a 8×8 pan with nonstick spray.

Wash, remove pits and slice cherries in half, set aside.  I think I ate my weight in cherries while doing this step 🙂

In a medium glass bowl melt the butter in the microwave.  Add the packed brown sugar, egg, and vanilla; stir until the mixture is combined.

Add the flour to the wet mixture and stir just until combined (be careful not to over stir or the blondes will be hard).

Add the chocolate chips and Cherry pieces.  Pour the batter into the greased pan and spread evenly in the pan.

Bake for 30-35 min. I like mine gooey with ice cream so I tend to only bake them for 30 mins.  Allow the blondes to cool slightly and then dive right in!

I like to serve my cherry blondes with some vanilla ice cream.  You could also mix this up, and use fresh raspberries and even white chocolate chips.  Ohhh the possibilities!
