No-Bake Sweet & Salty Peanut Butter Bars

No time to bake?  I know the feeling.  This sweet and salty recipe features semi-sweet chocolate, pretzel pieces and peanut butter.  I’ve spent the whole week in the classroom teaching my new hires the ropes of teller basics.  They have been such great students this week I figured they deserved a little treat.  No-Bake Sweet & Salty Peanut Butter Bars after a crazy week was the perfect way to end the training on a sweet note (Plus I didn’t have to turn on the oven).  🙂 It’s like a chocolate covered pretzel meets a peanut butter ball.  Whats not to love!No-Bake Peanut Butter Pretzel Bars

On a side note does anyone have any podcast recommendations?  I’ve been spending about two hours a day in the car driving, and looking for something new to listen to.  I’ve listened to EVERY kind of music possible and most of the TED Talks Podcasts.  I’d love any suggestions you have. 🙂

Ingredients:

Nonstick cooking spray

2 Cups Creamy Peanut Butter, divided

3/4 Cup Butter, softened (1 1/2 Sticks)

2 Cups Powdered Sugar, divided

3 Cups Pretzel Twists, broken into 1/2 inch pieces (I used Gluten Free)

2 Cups Semi-Sweet Chocolate Chips

 

Line a 9×13 baking pan with foil leaving an overhang on both sides (these will be our handles when we go to remove the bars).  Lightly spray foil with nonstick cooking spray.

No-Bake Sweet & Salty Peanut Butter Bars

Beat 1 1/4 Cup peanut butter with the melted butter until creamy.  slowly add one cup of the powdered sugar at a time until combined.  Add in 2 Cups of the pretzels and mix until they are combined and broken into pieces.  Press the mixture evenly into the pan (this is a great time to let the kids help).

In a medium bowl or large measuring cup melt the chocolate chips and remaining 3/4 Cup peanut butter in the microwave for about 1 min until the mixture is smooth.  If necessary you might need to microwave for an additional 30 seconds after you stir it to get the chocolate to fully melt and be smooth.

Spread the chocolate over the peanut butter layer.  Sprinkle the remaining cup of broken pretzels over the chocolate mixture pressing in slightly.  Place in the refrigerator for at least 3 hours or over night until firm.

Using those cute little wings we made with the foil remove the bars from the pan.  Using a sharp knife cut the bar into 40-60 pieces. Store in an air tight container for up to 1 week.  I doubt that they will last that long in your house but hey its worth a shot 😉
