Chili Chocolate Red Wine Bread

So I’m not one of those people who get all hung up on Valentine’s day.  I never really have been.  I’ve always thought that it’s how you spoil people, and show them you love them throughout the year that really matters.  I ABSOLUTELY love surprising people with little gifts, and letters throughout the year.  Honestly I think I get more out of the planning of the surprise then they probably do receiving it.  It makes me happy.  Funny part is I could care less about gifts or people spending money on me, weird right?  I would rather we sit, have a nice conversation and meal.

Well with Valentine’s day right around the corner I started to think about Valentine’s day things…Cards, Flowers, Chocolate, Wine.  Then my mind goes off in a downward spiral with the thought of chocolate and wine together.  Mmmmm.  The past few week have been super chilly here, and with that being said I have been consuming my fair share of hot chocolate.  I love a bit of Chili powder or cinnamon in my hot chocolate.  There is something about the heat of the Chili and the richness of the cinnamon that make me feel warm and snuggly.  This got me to thinking why not combine it with a bit of red wine and make a delicious bread, and so the chili chocolate red wine bread was born.  It took a few tries to prefect the recipe not going to lie but I think I finally have it down.  (I told you my mind goes on a downward spiral).

Chili Chocolate Red Wine Bread

I made this bread gluten-free; however if you want to use regular flour feel free to do so!  I also used dairy free butter but you can use any butter or margarine that you like.  ****I would like to point out that this bread is for adults only as the alcohol from the red wine doesn’t cook all the way out (You could always place the red wine on the stove and cook it off if you really wanted).   This chili chocolate red wine bread is super quick and easy to make.  The hardest part is waiting for it to bake the 60 minuets.

Ingredients:

1 (8Tablespoons) Stick Non Dairy Butter (or regular butter), Softened

3/4 Cup Brown Sugar

1/4 Cup Sugar

2 Eggs

1/3 Cup Coca Powder

1 Teaspoon Cinnamon

1 Teaspoon Chili Flakes or Powder

1 Teaspoon Instant Coffee (if you don’t have this on hand it can be omitted)

1 Cup Red Wine (dealers choice, I used a Merlot)

1 Teaspoon Baking Powder

1 1/4 Cup Gluten Free Baking Mix (or you can use regular flour)

Like I said this recipe is beyond easy.  Pre-heat oven to 350*. Spray a loaf pan with non-stick cooking spray, and set aside.   In a stand up mixer cream the softened butter, brown sugar and sugar together until combined and fluffy.  Scrape down the bowl.  Add in the eggs one at a time until combined.

Next add the cocoa powder, cinnamon, chili flakes, red wine and baking powder.  Mix until throughly combined.  With mixer on slowly add in the gluten-free baking mix 1/2 cup at a time.  Scrape down the sides of the bowl then give the batter a spin around the bowl one last time.  Pour the chili chocolate red wine batter into the greased loaf pan.

Bake in a 350* oven for 60 min or until done.
