Sassy Avocado Egg with Sriracha

 

Would you believe that the avocado is considered by many nutritional experts to be a perfect food? It’s considered a superfood by many.  Who wouldn’t want to start their day with two super foods protein from an egg and a fruit are key to starting your day off right.  Surprise, the avocado it’s not really a vegetable, it’s a fruit. According to google in areas south of the border, it’s often called the alligator pear because of its shape and dark green roughly textured skin.  I know what you are thinking avocados are heavy in calories.  Yes, but those are nutrient dense calories. And the fats are heart healthy monounsaturated fats and omega-3. This sassy baked avocado egg cup with sriracha is the perfect start to any day and its super easy to make!

It may be ideal to always buy organic, but you don’t have to with avocados. So far none are GMO, and the Environmental Working Group (EWG) has non-organic avocados in their “clean 15” list with mostly no detectable pesticide residue.  This weekend I had my girl friends over and we were discussing GMO and the change with Cheerios when one of my friends said what is GMO?  For those of you who are not familiar with what GMO stands for here you go  “GMOs, or “genetically modified organisms,” are plants or animals that have been genetically engineered with DNA from bacteria, viruses or other plants and animals. These experimental combinations of genes from different species cannot occur in nature or in traditional crossbreeding.  Most developed nations do not consider GMOs to be safe”.   Read more ok ok I’m jumping off my GMO soapbox now!  Lets get started on these sassy baked avocado egg cups.

Ingredients:

1 Large Ripe Avocado

2 Large Eggs

2 Slices of Bacon or precooked Bacon Bits

2 Tablespoons Cheese if desired

salt and pepper to taste

Sriracha or your favorite hot sauce

Pre-heat the oven to 400*F.  Start off by slicing the avocado in half length wise.  Remove the pit and discard it in the trash.

Remove a bit of the excess middle of the avocado and set aside for another use (or snack on it like I do when no one is looking).  Salt and pepper as desired.

Place the avocado in a small ramekin or bowl so that it remains steady.  Crack an egg into each avocado center.  Top with 1 Tablespoon of your favorite cheese if desired.  Place in the oven and cook for approximately 25 min until the egg is cooked through.

Avocado with Eggs

While the eggs are cooking you can either place the bacon in a cast iron skillet and cook it with the eggs in the oven or you can cook the back on the stove.  Personally I just pop everything in the oven then take a shower while it cooks.

Once the eggs and bacon are cooked remove the egg/ avocado from the avocado shell and top with crumbled crispy bacon and as much sriracha as you like.  These sassy baked avocado egg cups with sriracha are quick, easy, healthy start to the day!
