I know, I know these aren’t technically considered a cookie per-se, but these white chocolate rice crispy treats are definitely worth an honorable mention in the cookie field.  I didn’t re-invent the wheel with this recipe folks.  I took these white chocolate rice crispy treats into work last week, and let me just say they got RAVE reviews. Multiple people whispered, e-mailed, and called me telling me that they couldn’t help themselves eating 3 or more throughout the day! I then got begged for the recipe.

If you are looking for a quick, go to treat that the kids can help make this one’s for you.  It’s the sophisticated adult version of rice crispy treats, or at least thats what I’m claiming!  If you wanted to jazz up these white chocolate rice crispy treats you could drizzle them with red, or green chocolate melts.

 Ingredients:

2 C White Chocolate Chips

6 Tbsp. Butter

6 C Mini Marshmallows

6 C Crisp Rice Cereal

In a large glass bowl melt on high in the microwave 1 1/2 C of the white chocolate with 4 Tbsp. of butter stirring every 30 seconds until completely melted.

Marshmallows

Add all of the marshmallows to the bowl, and return to the microwave heat on high for 1 min until the marshmallows are melted stirring into the white chocolate mixture.  Once ingredients are combined add the crisp rice cereal.  Stir until all of the crisp rice cereal is coated with the marshmallow mixture.

Press the mixture into a greased 13×9- inch baking pan. (if you place a bit of butter on your hands it makes it easier to press into the pan).  Let sit until cooled.

Once cooled remove from the pan and cut into pieces. You can then melt the remaining 1/2 C white chocolate with the 2 Tbsp. Butter and drizzle it on top to give it a finished look. Plus it ups the yummy factor!
